A volatile oil produced by steam disillation of the mature seeding plant Foeniculum vulgare Mill. (Family Apiaceae). The oil is a pale yellow liquid having the characteristic odour and flavour of fennel. Crops are harvested in March and April with stock available year round. Both bitter and sweet fennel oils are available.
